With the air getting colder and days getting shorter we tend to crave stodgier, heavier foods. This is how my Vegan Creamed Spinach Recipe came about. Our bodies are actually responding to the cold winter as for literally thousands of years, this craving for richer or more calorie dense foods kept us alive through harsh winters where food became more scarce. We naturally put on a little extra weight this season, not the 7-10 pounds the media falsely tell us, this is untrue, just a little pound here and there so don’t worry. As long as your eating natural, healthy foods while still eating a good amount of raw fresh foods and avoid the bad sugar filled foods that will not only make you gain weight but also make you sick will get you through the winter just fine.
Did you know that heat is actually a nutrient?! Which is why we crave ‘hot’ food. My Vegan Creamed Spinach Recipe is a healthy stodgy food that won’t compromise your digestion or leave you asleep on the sofa!
Spinach is loaded with goodness for the whole entire body! Low in fat and even lower in cholesterol and with it’s high content of vitamins, minerals and phytonutrients make it a perfect food if you’re looking to lose weight, gain muscle, or maintain good health. High in niacin and zinc, as well as protein, fiber, vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese. You already can see how important it is to have spinach regulary in your diet, right?
Spinach is made up of 91.4% water, 3.6% carbs, 2.9% protein, and 0% fat.
Those of us who use to watch popeye will have known that when popeye guzzled down his can of spinach it made him grow big and strong. Well he was definitely on to something! A component of spinach, factor C0-Q10, which is an antioxidant, plays an important role in strengthening muscles, especially our most important muscle the heart which continuously pumps blood to all parts of the body.
Spinach is full of fibre and water so you can kiss constipation goodbye lol! It’s content of both soluble and no-insoluble fibre is very healthy for us. Insoluble fiber prevents constipation and improves the functioning of your digestive system, soluble fiber prevents your body from absorbing fat and cholesterol from food. This means regular bowel movements, easy removal of waste and toxins, prevention of constipation or diarrhea, and detoxification of the digestive tract.
Detoxifies the body
As I have already mentioned spinach contains phytonutrients that can help to detoxify the body and support liver function by preventing bacterial overgrowth from occurring in the gut microflora. Reduced inflammation of the digestive tract has been associated with the flavonoids and carotenoids found in spinach and less inflammation in the digestive tract reduces the chances of developing many digestive disorders.

Let’s Get Making….
Vegan Creamed Spinach Recipe
- 8 pieces of frozen chopped spinach
- 1/2 cup of Almond Milk
- 1 clove of garlic
- Handful of fresh dill
- 1/2 cup of soaked cashews (soak cashews in spring water for about 30 mins)
- 1/2 lemon juice
- 1/4 cup of spring water
- Himalayan salt – to taste
- Black pepper – to taste
- Place the spinach in a pan with 1/4 almond milk and and boil until spinach is cooked. It should have taken in most of the almond milk by the time it is done.
2. In a blender put the soaked cashews (make sure you’ve drained away the water), lemon juice, 1/4 cup of spring water, Himalayan salt and black pepper. Blend on highest speed until smooth and creamy.
3. Chop Garlic and dill finely and set aside, these are to be mixed in at the end.
4. Once spinach is cooked. Place it in a bowl and pour the ‘cream’ in and mix until it is all combined. Add the ‘cream’ in bit by bit until you get desired creaminess. I know we all like ours different, I like mine extra creamy!
5. Mix in the garlic and dill and serve!
